In the same way that countries patrol their borders, gourmands must patrol their counters.

This, of course, is to keep lesser delicacies (and unscrupulous poachers) from sneaking in.

Counter patrols are daunting even for seasoned menu veterans, as each entrant is (er) grilled thoroughly before being permitted to stay for (um) dinner.
