For many (um) seasoned gourmands, the best way to keep your taste buds fresh and on their toes is to rotate dishes.
This way, when a dish returns to the regular rotation after a long absence, your palate is clear enough to evaluate it almost as if you were tasting it for the first time!
And if the dish is remembered to be particularly scrumptious, then the pressure is on when it returns to live up to its own past reputation!
