When you have a truly refined palate, every step in the menu planning process must be scrutinized for quality.
For example, perhaps one day you notice one of your favorite gourmet dishes, “grilled cheese,” is on the menu.
Such a simple dish requires extra scrutiny, since all three ingredients (bread, butter, cheese) contribute equally to its relative scrumptiousness.
The best way to tackle this issue is to hold auditions.
